Maple Dijon Chicken & Swiss Grilled Cheese

- For Maple Dijon vinaigrette:
- 1/2 cup olive oil
- 1/4 cup apple cider vinegar
- 1 Tbsp + 1 tsp maple syrup
- 1 tsp Dijon mustard
- salt & pepper
- For Grilled Cheese:
- 2 cups shredded rotisserie chicken
- 1/2 cup green onion (white and light green portions) chopped finely
- 8 slices sourdough or other crusty, rustic bread
- 8 slices Swiss cheese
Prepare vinaigrette by combining all ingredients in a jar and shake until emulsified and creamy.
Toss chicken with vinaigrette and green onions and set aside. Preheat a Nordic Ware cast griddle or grill pan to medium-high heat. Take four pieces of bread and spread a light coating of mayonnaise on the outside of each of the slices, then place mayonnaise-side down onto heated pan. Add a slice of cheese to each piece of bread. Add 1/2 cup of chicken mixture on top along with another slice of cheese. Spread mayonnaise on outside of the remaining bread slices and place them on the top. Push down with the back side of a spatula so the inside of the sandwich begins to melt together. Cook for 3-5 minutes then flip and cook another 3-5 minutes until bread is crisp and cheese is melted.
