Ingredients
Burgers
- 1 lb 80/20 Ground Beef (Divided into 1/4 lb balls)
- 1 yellow onion (very thinly Finley sliced)
- 4 slices of American cheese
- 4 Brioche Buns
- Smoked sea salt (or regular salt) and black pepper
Special Sauce
- 1/2 cup mayonnaise
- 1 tbsp mustard
- 1/4 cup finely chopped baby dills (plus 1 tbsp brine)
- 2 tsp sugar
- Salt and pepper
Directions
To make the burger sauce, combine all ingredients in a small bowl and stir until smooth. Set aside.
Heat a flat top grill-griddle or large skillet over medium-high heat. Add a drizzle of oil. Place a ball of ground beef on the hot surface, then top it with a small handful of onions.
Cover the ball with a piece of parchment and press down firmly using the Nordic Ware Weighted Grill Press to create a uniform patty. Season generously with smoked salt and pepper.
Cook the patty for 2–3 minutes until a golden crust forms. Scrape under the patty using a spatula to release it, then flip. Season the other side with smoked salt and pepper. Cook for one more minute, then add your choice of cheese on top. Cover the patty with Cheese Melting Dome to help the cheese melt evenly.
While the cheese melts, spread a little butter on the flat top and toast the brioche buns until golden. Remove the toasted buns from the heat and add to Burger Trays for easy serving.
Spread the burger sauce on the bottom bun, then place the cooked patty on top. Add any additional toppings, then finish with the toasted top brioche bun. Serve immediately with your favorite sides.
