Ingredients
Spiced Vanilla Cake:
- 3 ½ cup flour
- 1 ½ tsp salt
- ½ tsp baking soda
- 1 tbsp cinnamon
- ½ tsp nutmeg
- 1 cup butter, softened
- 2 3⁄4 cup sugar
- 6 eggs
- 2 tsp vanilla extract
- 1 ½ cup plain yogurt
Apple Butter Filling:
- 1 cup apple butter
- 2 tbsp flour
Directions
Preheat oven to 325° F. Prepare pan with shortening and flour or baking spray.
In small bowl, mix together flour, salt, baking soda, cinnamon, and nutmeg. Set aside.
Using a mixer with a paddle attachment, cream butter and sugar. Add eggs one at a time and mix until thoroughly incorporated. Mix in vanilla and yogurt. Blend until smooth. Add flour mixture on low speed and mix just until no dry streaks remain.
For the filling, mix together apple butter and flour in a small bowl. Set aside.
To assemble, pour 3⁄4 of the batter into prepared 12-Cup Bundt Pan. Add the apple butter filling in a thin layer across the batter. Use a spatula or the back of a spoon to swirl the filling into the batter using an up and down motion. Do not push the filling to the bottom of the pan. Add the remaining batter on top filling 3/4 full and tap gently on counter to release air bubbles.
Bake for 65-70 minutes or until toothpick inserted into center of cake comes out clean. Remove from oven and let cool for 10 minutes before inverting onto a cooling rack. Dust with powdered sugar or top with a simple glaze.
