These sourdough flour tortillas are a soft, flavorful way to use up your discard and make something truly satisfying from scratch. They’re pliable, slightly chewy, and cook up with beautiful golden brown spots. Perfect for tacos, wraps, or even warm with butter. The sourdough discard gives each tortilla a subtle tang that deepens the flavor without overpowering, and the dough comes together quickly with just a short rest. Once you try them, it’s hard to go back to store-bought!
Ingredients
- 1/3 cup (100g) sourdough discard
- 1/3 cup (75mL) room-temperature water
- 4 Tbsp (57g) melted butter
- 1 2/3 cups (200g) all-purpose flour
- 1 tsp (5g) salt
Directions
In a medium bowl, mix together discard and water until frothy using a Danish Whisk. Stir in melted butter until combined. Add flour and salt, and mix until a rough dough forms. Knead the dough by hand in the bowl or on a lightly floured countertop until it becomes smooth and slightly elastic. Cover the dough and let it rest for 15 minutes.
Divide into eight equal pieces (about 50g). Roll each piece out ¼ inch thick on a lightly floured surface using a floured rolling pin. Heat a dry skillet over medium-low heat and cook each tortilla for about 1 minute per side, or until golden, cheetah-like spots appear. Add to a tortilla warmer lined with a damp towel until all tortillas are cooked and ready to serve.
