Egg Breakfast Sandwich with Avocado and Tomato

  • Ingredients
    • For Cilantro Avocado Spread:
    • 1 large avocado, skinned and pitted
    • 1 1/2 cups cilantro
    • 1/4 cup olive oil
    • 1 Tbsp apple cider vinegar
    • 2 limes, juiced
    • 2 cloves garlic
    • salt & pepper, to taste
    • For Breakfast Sandwich:
    • Egg(s)
    • Bagel(s), halved & toasted
    • Sliced tomatoes
    • salt & pepper to taste
  • Directions

      For the spread, combine all ingredients in a food processor until creamy. Add more apple cider vinegar if it’s too thick.

      Using a Nordic Ware Egg N’ Muffin pan, scramble one egg in pan and add salt and pepper. Close the top and microwave for one minute until cooked. While egg is cooking, toast bagel until warm and crispy. On bottom bagel half, add egg patty and sliced tomatoes. Spread Cilantro Avocado Spread on the top bagel half. Place on top of sandwich and breakfast is ready to go! Repeat with Egg N’ Muffin Pan if making more than one sandwich.
