Ingredients
- 1/ 2 cup butter, melted
- 1 cup sugar
- 2 large eggs
- 1 tsp coconut extract
- 2 tablespoons lime juice
- zest of one lime
- 2 1/ 2 cups flour
- 2 1/ 2 teaspoons baking powder
- 1/ 2 teaspoon salt
- 1 cup coconut milk
Directions
Preheat oven to 425˚ F. Line with paper liners or grease muffin tin with butter and dust with flour. In medium bowl mix flour, baking powder, and salt. In a large bowl whisk together butter and sugar. Whisk in eggs one at a time, then add coconut extract, coconut milk, lime juice, and lime zest. Fold in flour mixture and butter mixture until just combined. Allow batter to rest for 30 minutes. Scoop batter evenly into muffin pan. Bake at 425˚ F for 5 minutes then reduce oven temperature to 350˚ F and bake for an additional 10-12 minutes or until a toothpick inserted comes out clean. Let cool before removing from pan. Top with sweetened coconut flakes and lime zest.
