Ingredients

  • 1 cup granulated sugar
  • 3/ 4 cup butter, softened
  • 2 eggs
  • 1 egg white
  • 1 cup mashed bananas (3 small bananas)
  • 1/ 2 teaspoon vanilla
  • 2 cups flour
  • 3/ 4 teaspoon baking soda
  • 1/ 2 teaspoon salt
  • 1 (11.5oz) pkg milk chocolate chips, divided

Directions

Heat oven to 350°F. Grease and flour mini loaf pans; set aside. In large bowl, combine sugar and butter. Beat at medium speed, scraping bowl often, until creamy. Add eggs; continue beating until well mixed. Reduce speed to low; add bananas and vanilla. Beat until well mixed. Add flour, baking soda and salt; stir until blended. Stir in 1¼ cups chocolate chips. Spoon batter into prepared pans. Sprinkle remaining chocolate chips on top of batter in pans. Bake for 34-38 minutes, until toothpick inserted in center comes out clean. Let stand 5 minutes; remove from pans. Cool completely. Makes 4 mini loaves.
