Baked Indian Style Stuffed Tomatoes

These Indian-inspired stuffed tomatoes are a vibrant way to use up peak-season produce. Roasted on our Brilliant Half Sheet, each tomato is filled with a flavorful mix of spiced potatoes and garbanzo beans for a satisfying vegetarian (and gluten-free) meal or side dish. Bold, wholesome, and perfect for summer.

Ingredients
- 12 vine tomatoes
- 1 Tbsp avocado oil
- 1 small yellow onion, finely chopped
- 1 tsp garlic paste
- 1 tsp ginger paste
- 1 tsp Garam Masala
- 1/2 tsp Kosher salt
- Pulp scooped from 4 tomatoes
- 1/2 tsp crushed ground pepper
- 2 cups boiled mashed potatoes
- 1 can Garbanzo beans
Directions
Preheat oven to a 350° F. Cut a thin slice off the top of each tomato. Scoop out pulp with a teaspoon leaving ½ inch of the shell. Save pulp of the 4 the tomatoes for the filling. Invert onto paper towels to drain any excess moisture. Set aside.
To make the stuffing, heat oil in a saucepan. Add chopped onion and sauté until translucent. Add garlic and ginger paste and sauté for 2 minutes. Add spices and salt, along with the pulp of 4 tomatoes. Let this mixture cook until the tomatoes disintegrate completely. Add mash potatoes and garbanzo beans and cook the mixture for 6 to 8 minutes.
To assemble the stuffed tomatoes, spoon the filling into each tomato and set it on the Brilliant Half Sheet. Bake the tomatoes for 25 to 30 minutes. Let cool for a few minutes and serve immediately.
