Ingredients

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp pure almond extract
  • 1/2 cup milk
  • 1/3 cup canola or vegetable oil
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter, melted and cooled
  • Glaze
  • 1 cup powdered sugar
  • 2-2 1/2 Tbsp milk
  • 1/2 tsp pure almond extract
  • 1/2 tsp pure vanilla extract

Directions

Preheat oven to 350°F. Prepare Winter Wonderland Loaf Pan with baking spray containing flour and use a pastry brush to evenly coat the details of the pan. In bowl of stand mixer, blend sugar, eggs, and almond extract on low speed. Stir in milk and oil until blended. Add flour, baking powder and salt. Mix until blended, scraping down sides of bowl. With mixer on low, slowly add butter and mix until smooth.

Pour batter into loaf pan, filling 3/4 full and tap gently on towel covered counter to remove air bubbles. Bake for 55-60 minutes or until tester comes out clean. Cool cake in pan for 10 minutes, then invert onto a cooling rack. Cool completely.

Mix all glaze ingredients in a small bowl. Pour over cooled cake when ready to serve.
