Cranberry Santa Loaf

Ingredients
- 1 1/ 2 cups flour
- 1 teaspoon baking soda
- 1/ 2 teaspoon salt
- 3/ 4 cup brown sugar
- 1/ 2 cup melted butter
- 1 cup canned cranberries
- eggs 2
- 1/ 2 cup orange juice
- 1 teaspoon vanilla

Directions
Preheat oven to 350 degrees. Prepare pan by brushing with shortening or spraying with baking spray. In a bowl combine flour, baking soda and salt. In large bowl blend sugar, butter and cranberry. Add eggs one at a time, mixing thoroughly after each addition. Slowly add flour mixture, orange juice and vanilla. Mix until blended. Pour batter into prepared pan. Tamp on counter to get out air bubbles. Bake for 30- 40 minutes or until toothpick inserted in center of loaf comes out clean. Let stand on cooling rack for 10 minutes before inverting onto plate.

This recipe has problems. It says to add salt, however, there is no salt listed in the ingredients. So I used a 1/2 teaspoon of salt. I used frozen cranberries instead of canned cranberries. The real cranberries add a burst of tartness. Delicious! Next time I might add some ground cinnamon, cloves, and nutmeg to the recipe.
