Quick, Delicious Egg Bites Are Just a Microwave Button Away!

Eggs definitely do not get their due. Let’s think about eggs – they can be savory in an instant. They’re also the glue that binds sweet things together. Hard boiled or Deviled eggs can be the perfect snack. Egg salad sandwiches for a picnic are pretty much perfect. But where they really shine is breakfast.

While you may have visions of scrambled eggs and bacon on weekend mornings, there is no need to wait that long to have a delicious, delectable egg breakfast. And the best part is that you don’t even have to head to the deli or spend time in a drive-thru. All you need is our new Egg Bites pan, a microwave, some water and a little imagination.

This pan will make fluffy homemade egg bites in a flash for a great low carb, healthy snack or breakfast. Eat them straight from the microwave or make them ahead of time to store and eat on the go. All you have to do is whip up some eggs (up to four!), add your favorite fillings (cheese, please!), add some water into the pan cavity and in less than five minutes, you have the perfect breakfast, whether you’re working from home, driving into the office, walking the dog or fighting for position in the school drop-off line. It’s a great grab-and-go treat for kiddos on the way to school and perfect for college dorm cooking, too! Perfect, delicious, healthy egg bites make for happy mouths and full bellies.

Egg Bite Recipes:

We have some simple and delicious recipes to get you started. Try these out:

Ingredients:

  • 4 eggs
  • 1 Tbsp cottage cheese
  • ¼ cup shredded cheese
  • ½ Tbsp salted butter, softened
  • ⅛ tsp salt
  • ⅛ tsp pepper

Optional add-ins:  

  • 2-3 Tbsp finely diced pre-cooked ham, bacon or sausage
  • 2-3 Tbsp finely chopped veggies or herbs

Directions:

  1. n a food processor or blender, combine eggs, cottage cheese, shredded cheese, butter, salt and pepper and blend on low until mixture is smooth, approximately 20 seconds.
  2. Fill outer well of Microwave Egg Bites pan with water up to fill line.
  3. Evenly distribute the egg mixture up to the fill line in each cavity.
  4. Place lid on top of Egg Bites Pan and microwave on high for 2 minutes and 30 seconds. Use caution while using an oven mitt or hot pad to remove lid from pan, taking care not to spill contents which will be very hot.
  5. Using a small spatula or spoon, gently flip egg bites in each cavity. Place lid back on pan and microwave on high for another 30 seconds.
  6. Flip egg bites in each cavity a second time and microwave for another 30 seconds on high. Egg bites are done once eggs appear solid; if additional time is necessary, cook in 30 second increments until fully cooked. Note, cook times will vary based on microwave wattage.
  7. Let egg bites rest for 1 minute with lid on before serving.
  8. When ready, gently scoop out egg bites and serve immediately or refrigerate in a sealed container for up to 3 days.

Optional add-ins

If adding finely diced meat or vegetables to your Egg Bites, place a spoonful of mixture in each cavity, then fill with blended egg mixture up to fill line and stir each cavity once with a spoon. Do not fill past line or Egg Bites will overflow.

 

Ingredients:

  • 4 eggs

  • ⅛ tsp pepper
  • ¼ cup finely shredded cheese

Optional add-ins:

  • 2-3 Tbsp finely diced precooked ham, bacon or sausage
  • 2-3 Tbsp finely chopped veggies or herbs

Directions:

  1. In a liquid measuring cup or small bowl with pour spout, whisk eggs, salt and pepper with a fork.
  2. Fill outer well of Microwave Egg Bites pan with water up to fill line.
  3. Pour egg mixture to fill line in each cavity. Evenly sprinkle cheese between the four cavities and stir to combine.
  4. Place lid on top of Egg Bites Pan and microwave on high for 2 minutes and 30 seconds. Use caution while using an oven mitt or hot pad to remove lid from pan, taking care not to spill contents which will be very hot.
  5. Using a small spatula or spoon, gently flip egg bites in each cavity. Place lid back on pan and microwave on high for another 30 seconds.
  6. Flip egg bites in each cavity a second time and microwave for another 30 seconds on high. Egg bites are done once there is no liquid egg visible. Cook in additional 30 second increments until fully cooked if needed. Note, cook times will vary based on microwave wattage.
  7. Let egg bites rest for 1 minute with lid on before serving.
