Why Baking Sheets Warp in the Oven + How to Prevent It

Picture this: You’ve just put your sheet pan dinner in the oven and are settling in to get some other tasks done before dinner. Suddenly, you hear a loud “pop” from the kitchen. This can only mean one thing; your sheet pan may not be the same. In fact, it may have warped due to the heat from the oven. 

Unfortunately, this is something that happens repeatedly due to the heat and stress the oven puts on a baking pan. In fact, any baking sheet can warp a little bit when it heats up; but the sign of a quality baking pan is that after it cools, the pan will snap right back into shape. Most baking sheets warp slightly and return to shape once cooled. But repeated warping can lead to permanent bending or uneven baking over time. 

The good news is there are ways to prevent a baking pan from warping. There are even ways that a warped baking sheet can be snapped back in place. Why does my baking sheet warp in the oven? 

A baking sheet warps in the oven for a few reasons. The first has to do with temperature. Placing a cool baking sheet into a hot oven will cause the metal to heat up and expand. That’s when you may hear a “pop” noise from the oven – the pan is expanding at different rates. This can also happen if a baking pan is cooled too quickly; perhaps from the oven directly into cold water to rinse it. In both of these instances, the metal rapidly contracts or expands, leading to warping or buckling. 

Another reason for a warping baking sheet has to do with weight distribution. It may seem as if your proteins or vegetables aren’t that heavy, but if a baking sheet is too heavy on one side, the pressure plus heat causes one part to strain more than the other. That can cause both temporary or permanent warping, depending on the quality of the sheet pan. 

How do I know my baking sheet is warping? 

You may be able to tell your sheet pan is warping by the popping noise in the oven. That noise is your sheet metal suddenly bending or flexing due to heat stress and is a classic sign of warping. 

You may also be able to tell by eye. After baking, place the cooled baking pan on a countertop or table. If it rocks or no longer lies flat, it’s warped. You can also do this experiment by holding the pan up to eye level and checking for any curves or twists. 

Another way to tell if a pan is warped is by food distribution. If food slides to one side, if oil or other liquids tend to pool in one corner, or if food is coming out of the oven cooking unevenly, then your baking pan is most likely warped. 

Can I fix my warped baking sheet?

It may be possible to fix a warped baking sheet, but it all comes down to the quality of the metal. A mild warp may be fixable with just some pressure. Make sure the baking sheet is completely cooled, place it on an even surface (like a countertop) and then apply pressure with your hands to the highest part of the bend. 

Additionally, America’s Test Kitchen explains that for major warping, heating it for a few minutes and then shaping it can also help. However, if a baking pan rocks badly, has deep bends, or has lost its shape multiple times, it’s unlikely to fully recover.

How to prevent sheet pan warping

There are plenty of ways to avoid sheet pan warping, but it all comes down to the way one cares for the baking pan. Keeping some best practices in mind when cooking with a baking pan can help extend the life of it. 

Avoid heating or cooling pans too quickly

When it comes to warping baking pans, it all comes down to science! Heating or cooling pans too quickly is the root cause of many instances of warping. Slower, more even heating and cooling allows the entire sheet pan to expand and contract uniformly, helping it keep its shape over time. So, bringing sheet pans up to room temperature before popping them in the oven is crucial to keeping them from warping. The reverse is also true; allowing them to cool down completely before rinsing them in cold water is also a way to keep your baking pans from warping. 

Additionally, avoiding major temperature swings (like a hot oven to a cold fridge) will also allow them to keep their shape without twisting or bending. 

Know your ovens hot spots 

Knowing the hot spots of your oven is also a way to ensure baking pans don’t lose their shape over time. Hot spots cause some areas of your sheet pan to heat faster than others. This leads to uneven metal expansion, which can cause bowing, popping, or warping, especially in thinner pans. One way to avoid warping via hotspots is to rotate your pan halfway through cooking or baking; or you could invest in a high-quality pan that holds its shape better under uneven heat. Additionally, try making sure that baking pans are placed as close to the center of the oven as possible to allow for the avoidance of hot spots. 

To look for hotspots in the oven, try the bread test, sugar test or even a cookie test. By laying out bread, sugar or cookies and baking for a set amount of time, it is easy to spot where the hotspots in the oven are and how to adjust cooking and baking accordingly. 

Evenly distribute food on the pan

Evenly distributing food on a baking sheet isn’t just about getting perfect browning—it also helps prevent warping by minimizing physical and thermal stress on the pan. When food is piled unevenly (e.g., all on one side), that area puts more physical pressure on the pan. Under high heat, that side expands differently, leading to uneven stress that can bend or twist the pan. 

Areas with no food heat up much faster, while areas with food heat slower due to moisture and mass. That difference in heat absorption creates internal stress across the sheet and leads to baking sheet warping. 

Buy high quality pans that won’t warp

The best solution to ensuring baking pans won’t warp in the oven is purchasing those that are of high quality. This includes 18mm gauge (or more) aluminum or steel; rolled or reinforced rims and a flat, solid base. Checking the heat rating is also a way to tell if a baking sheet will warp in the oven. Look for one that is oven safe for 450°F or more. This is a great indicator of quality.
