Oatmeal Chocolate Chip Layer Bars

These delicious oatmeal chocolate chip layer bars will be a new favorite quick bar dessert especially for kids! Easy treat to bring to a birthday party or gathering with friends and family.

Ingredients

  • Crust:
  • 3/4 cup butter, softened
  • 3/4 cup confectioners sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup old fashioned oatmeal
  • Filling:
  • 2 large eggs
  • 2/3 cup honey
  • 1/2 tsp baking soda
  • 1/4 cup wheat germ
  • 1/2 cup old fashioned oatmeal
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup flaked coconut
  • 1/2 cup chopped walnuts (optional)

Directions

For Crust:

Preheat oven to 350° F. Prepare 9” x 13” baking pan with baking spray or butter. Using a mixer, combine crust ingredients until butter is crumbly. Press mixture evenly into bottom of prepared pan. Bake for 12 – 15 minutes until edges of crust are golden.

For Filling:

Using a mixer, beat eggs and honey until smooth. Add baking soda, wheat germ and oatmeal and blend thoroughly. With spatula, fold in chocolate chips, nuts and coconut. Pour over hot crust and spread evenly. Bake for 12 – 15 minutes until center is set. Cool completely before cutting. Makes about 30 bars
