Chocolate-Dipped Peanut Cookies

- 1/ 2 cup butter, chilled
- 1/ 2 cup peanut butter
- 1 1/ 4 cups flour
- 1 cup brown sugar
- 1 egg
- 1/ 2 teaspoon baking soda
- 1/ 2 teaspoon vanilla
- 1 cup chopped peanuts, divided
- 10 oz dark chocolate, chopped
Preheat the oven to 375º F (190ºC). In mixer bowl, mix butter and peanut butter on medium speed until combined. Add ¾ cup flour and next 5 ingredients (through vanilla) and mix until combined. Add remaining flour and mix to combine. Stir in ½ cup chopped peanuts. Place level scoops from cookie scoop onto baking sheet. Flatten with fork. Bake 7-9 minutes or until lightly brown on the edges. Cool on wire rack.
Melt chocolate over low heat. Dip cookies in chocolate and place on baking sheet lined with waxed paper. Sprinkle with chopped peanuts. Refrigerate cookies until chocolate is set.
