Fall Spice Stamped Cookies

You will “Fall in love” with these pumpkin spiced Fall Forest Stamped Cookies, in festive acorn, leaves and pinecone designs. This sweet shortbread-style cookie recipe is easy to make with our Fall Forest Square Cookie Stamps. Just roll, stamp and bake for beautifully detailed cookies for the ultimate treat! Enjoy plain, brush with honey or melted butter and sprinkle with cinnamon sugar, add a light glaze to highlight each design or make cookie sandwiches with a buttercream frosting filling. Add these cookies to your Fall baking plans!
Ingredients
- 1 cup unsalted butter, room temperature
- 1 cup packed dark brown sugar
- 1 large egg
- 1 tsp vanilla
- 2 2/3 cups flour
- 1 Tbsp pumpkin spice (or cinnamon)
- 1/2 tsp salt
- Granulated sugar for rolling
Directions
With an electric mixer with a paddle attachment, cream butter and brown sugar at medium speed until fluffy. Beat in egg and vanilla. In a separate bowl, combine flour, pumpkin spice and salt. Slowly add flour mixture to wet ingredients until dough forms. Turn out dough on surface and knead until smooth. Place back in bowl, cover and refrigerate for 15-30 minutes.
When ready, let dough sit out for a few minutes to soften. Preheat oven to 350° F. Roll dough into large balls, about ¼ cup in size (70 grams). Roll in sugar (optional) and place on an uncoated aluminum baking sheet. To stamp, press square stamp down on dough in circular motion until the stamp hits the surface and dough spreads past the outside edges of stamp. Twist stamp back and forth and slowly tilt to release from dough. Remove excess dough around design if desired. Repeat with other stamp designs. Bake for 12-15 minutes. Let cookies cool on baking sheet for 5 minutes and carefully remove to cool completely on a wire rack. Repeat steps with remaining dough. Makes about 12-14 square cookies.
Serving Suggestions:
- Enjoy these spiced cookies plain! No extra decoration needed.
- Brush lightly with honey or melted butter and sprinkle with cinnamon sugar
- Brush a light glaze over the cookies like a maple glaze or simple vanilla glaze. Be sure it is not too thick so you can see the designs.
- Add a buttercream filling and make Fall cookie sandwiches.

I liked your recipe. I didn’t have pumpkin spice so I used Apple Pie Spice. They tasted great.
