Preheat pan over medium heat and season with butter or oil. In a medium bowl, sift together flour, baking soda, sugar, baking powder and salt; set aside. Beat egg until light and fluffy. Add egg, buttermilk and butter to dry mixture; mix until blended. Spoon about 2 Tbsp. batter into each cavity, and cook until pancakes bubble. Turn each pancake over and continue cooking until pancakes are a light golden brown.
