Maple Walnut Oatmeal Cookies

- 1 1/ 2 cups oats
- 3/ 4 cup flaked coconut
- 1 1/ 3 cups all-purpose flour
- 1/ 2 teaspoon salt
- 2/ 3 cup light brown sugar
- 8 tablespoons unsalted butter
- 3 tablespoons maple syrup
- 2 tablespoons light corn syrup
- 1 teaspoon baking soda
- 2 tablespoons boiling water
- 1 teaspoon maple extract
- 1 cup walnuts, coarsely chopped
Preheat oven to 300 Degrees F. In medium bowl combine oats, coconut, flour, salt and sugar; set aside. In a small saucepan, over medium heat, combine butter, maple syrup and corn syrup until the butter has melted. Remove pan from heat.
In small bowl combine baking soda with boiling water and immediately stir the mixture into the melted butter until combined. Add maple extract and stir into the oat mixture. Fold in the walnuts.
Drop dough onto cookie sheets with Cookie Dropper. Flatten each of the balls slightly. Bake until golden brown, about 20 minutes. Transfer to wire rack to cool.
