Coconut Almond Spice Granola

• 3 cups rolled oats or gluten free rolled oats
• ¼ cup flax seeds
• 1 cup sliced almonds
• 1 cup pecans
• 1 tsp ground cinnamon
• 1 tsp ground ginger
• 1/2 tsp ground nutmeg
• 1/4 tsp sea salt
• 1/4 brown sugar
• 1/4 cup honey
• 1/2 cup coconut oil, melted
• 1/2 cup unsweetened coconut flakes
• 1/4-1/2 currants

Preheat oven to 300° F. In a large bowl, combine oats, flax seeds, sliced almonds, pecans, spices, salt and brown sugar. Add honey and melted coconut oil and thoroughly mix until everything is evenly coated.

Spread granola mixture evenly across a Naturals Half Sheet Pan. Bake for 20 minutes. Take pan out and mix in coconut flakes, flipping granola mixture in pan. Place pan back in the oven and bake for another 20-25 minutes. Within this time, stir mixture once or twice to make sure granola isn’t burning. Keep a close eye to make sure not to over bake. Granola is done when golden brown and fragrant (mixture may not seem crispy but as it cools, it will crisp up).

Let granola cool completely before serving. For granola clusters, let cool without mixing on pan and pieces will clump together. If you prefer granola not to form clusters, consistently stir in pan as granola cools.

Once the granola is cool to touch, mix in currants or preferred dried fruit and store in an air-tight container. Enjoy with yogurt and fruit, milk, or by itself as a sweet crunchy snack!
