Mini Banana Bread Loaves





Whip up something mini and sweet for breakfast! This mini classic banana bread loaf recipe is baked in our ProCast Mini Loaf Pan for the perfect sized loaves to share with friends and family. Customize this moist and sweet banana bread with your favorite topping varaitions from below including chocolate chunk & almond slivers, a cinnamon streusel topping or candied oranges with a simple orange glaze.



  • 1 2/3 cups flour
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • 1 cup sugar
  • 2 eggs
  • ½ cup oil
  • 4 large ripe bananas
  • 2 Tbsp sour cream
  • 2 tsp vanilla

Optional Toppings (see directions for recipe specifics):

  • Chocolate chunk & almond slivers
  • Cinnamon Streusel Topping
  • Candied Oranges + Glaze


Banana Bread:

Preheat oven 350˚F. Sift flour, baking soda and salt in a bowl and set aside. Mash bananas in separate bowl. With a fitted paddle in a stand mixer, beat sugar and eggs for 3-5 minutes. Add in oil and mashed bananas and mix until just incorporated. Then mix in sour cream and vanilla.  Slowly add in dry ingredients – don’t over mix.

Prepare each cavity with baking spray with flour. Fill each mini loaf cavity ¾ full and add desired toppings from below*. Bake 20-30 minutes or until a toothpick comes out mostly clean and the loaves are golden brown. Makes about 8-9 mini loaves

*Topping options:

Chocolate Chunk & Almonds

Sprinkle on top of batter in cavities before baking.

Cinnamon Streusel Topping:

  • 2 Tbsp butter, melted
  • ¼ cup brown sugar
  • ¼ cup flour
  • 1 tsp cinnamon
  • Pinch of salt
  • ¼ cup toasted and chopped pecans (optional)

Melt butter and let it cool slightly. Mix in all other ingredients. Sprinkle on top of batter in cavity before baking.

Candied Oranges + Glaze

Candied Oranges

  • We used store-bought from Trader Joes but could make candied oranges from scratch as well.

Orange Glaze Ingredients

  • ½ cup powder sugar
  • Pinch of grated orange zest
  • 1 Tbsp juice from an orange

If making candied oranges from scratch, prepare desired recipe. If using store-bought, add candied slices to top of loaf batter before baking.

Mix all glaze ingredients together in a small bowl. Drizzle over cooled candied orange loaves once ready.
