Bran Bundtlette Muffins

Simple bran muffin recipe made in a Bundtlette Pan! Serve with honey butter for a delicious breakfast option. Recipe from Nordic Ware’s “The Bundt Cookbook.”
Ingredients
- 3 Cups All- Bran® Cereal
- 1/2 cup shortening
- 1 cup sugar
- 2 eggs
- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking soda
- 1/2 tsp salt
- 2 cups buttermilk
Directions
Preheat oven to 400° F. Prepare Anniversary Bundtlette Pan with baking spray. Heat 1 cup of water and bring to a boil. Remove from heat and add 1 cup of All-Bran. Let soak. Transfer to a large mixing bowl and add shortening, sugar and eggs.
Combine flour, baking soda and salt in a medium bowl. Add alternately with buttermilk to egg-bran mixture. Mix in remaining 2 cups All-Bran. Spoon batter into prepared pan, filling each well only 2/3 full. Bake for 15-20 minutes or until muffins test done. Let cool for 5 minutes before inverting onto a cooling rack. Repeat with remaining batter.
