Lemon Quickbread

  • Ingredients
    • Bread:
    • 1/ 2 cup butter, softened
    • 1 cup sugar
    • 2 eggs
    • 3 tablespoons lemon juice
    • 1 tablespoon grated lemon zest
    • 1 1/ 2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/ 4 teaspoon salt
    • 1/ 2 cup milk
    • Glaze:
    • 3/ 4 cup confectioners sugar
    • 2 tablespoons lemon juice
  • Directions
    • Heat oven to 350 degrees F. Lightly grease pan. In large bowl, beat butter and sugar on medium speed until light and fluffy. Beat in eggs, lemon juice and lemon zest. In medium bowl, combine flour, baking powder and salt. Gradually stir flour mixture into butter mixture, alternating with milk and mixing well after each addition. Spoon batter into prepared pan. Bake 40-50 minutes, until toothpick inserted comes out clean. Cool 10 minutes in pan. Remove loaf from pan and place on cooling rack. In small bowl, stir together confectioner’s sugar and lemon juice. Spoon glaze over bread.
