- 6-oz halibut or other white fish
- 1/ 4 cup freshly squeezed lime juice
- 1/ 4 teaspoon cayenne pepper
- 1/ 4 red bell pepper, sliced
- 1/ 4 yellow bell pepper, sliced
Combine lime juice and cayenne pepper in shallow dish. Add fish and marinate 15 minutes, turning once. Remove from marinade, brush fish with canola oil and sprinkle with salt and pepper. Preheat lightly oiled fajita pan on grill 3 minutes. Place one fillet in center of pan and surround with peppers and onion. Grill until fish flakes easily with a fork and vegetables are tender and browned, turning once, about 5-7 minutes total depending on thickness of fish. Heat tortillas on grill and serve fish and vegetables with tortillas, salsa, lime wedges and cilantro.
