Apricot Lattice Art

Ingredients

  • 3 tablespoon all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/ 2 teaspoon salt
  • 1 cup cold butter, cubed
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 (16 oz) bag of fresh or frozen sliced apricots or peaches
  • 1 cup apricot preserves

Directions

In a large bowl, combine flour, sugar, baking powder and salt; cut in butter until crumbly. Combine eggs and vanilla; stir into crumb mixture until blended. Cover and refrigerate about a fourth of the dough for 1 hour. Press remaining dough into ungreased pan, creating a ½ in. edge. Spread apricot preserves over the dough and layer sliced apricots on top, avoiding the edge. Preheat oven to 325 degrees F. Roll out reserved dough to ¹/8 in. thickness. Cut into ½ in. strips; make a lattice top. Bake 30-35 minutes or until lightly browned. Cool on wire rack. Makes about 2 dozen bars.
