These spicy skull cake bites are the perfect blend of sweet and spicy (hot) flavor in a bite-sized spooky treat. Add these cute yet creepy cake bites to your Halloween display!

Ingredients

  • 1/2 cup brown sugar, packed
  • 6 Tbsp unsalted butter, softened
  • 1 large egg
  • 1/2 cup pure maple syrup
  • 1 1/2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp cayenne pepper
  • 1/4 tsp ground cloves
  • 1/4 tsp baking soda
  • 1/2 tsp kosher salt
  • 1/4 cup hot water

Directions

Preheat oven to 350°F. Prepare Skull Bites Cakelet Pan with baking spray containing flour and use a pastry brush to evenly coat the details of the pan. Using a mixer with a paddle attachment, cream sugar and butter. Blend in egg and maple syrup until smooth. In a small bowl, whisk together flour, spices, baking soda and salt. Slowly pour into butter mixture and blend on low speed until just combined. Stir in hot water and blend. Pour batter into each cavity, filling only half full. Gently tap pan on towel-covered countertop to remove any air bubbles. Bake for 12 minutes or until edges are lightly browned and center of cakes firm to touch. Cool cakes in pan for 5 minutes, then invert onto a cooling rack. Clean pan, prepare with baking spray and repeat with remaining batter. Yields 32-36 Spicy Skull Cake Bites.

I used this recipe with the bigger skull pan (made 6 big ones per batch). I adjusted the heat to 325, and baked for about 20 minutes until they were done. The flavor is great- loved the cayenne kick. However they are a little dense, and agree that they are slightly dry. I served them with apple compote and hot salted caramel which were good complements.

These bites came out surprisingly delicious! I didn’t have the issues of dryness or getting them out of the pan that the other reviewer noted but agree that they need a little “something” for topping…..glaze? cinnamon eyes? Will definitely be making them again.

These have a lovely little kick and were a huge hit at last Halloween’s party. They tend to be a little on the drier side (to get them out of the mold). I had to use a couple of longer toothpicks to ease the cakes out of the molds. I definitely recommend glazing them (personal preference) but adults appreciated they weren’t cloyingly sweet.
