Learn how to make this Sticky Toffee Bundt recipe in an Instant Pot®! A great way to make a Bundt using our 3 Cup Bundt Pan- fits perfectly! This moist, dense cake makes a delicious small dessert, topped with an irresistible brown sugar pecan glaze.

Ingredients

  • Cake
  • 3 Tbsp butter, softened
  • 1/3 cup brown sugar
  • 1 large egg
  • 2 Tbsp molasses
  • 3 Tbsp water
  • 3/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 3/4 cup finely chopped dates
  • 1/4 cup finely chopped pecans
  • Glaze:
  • 1 Tbsp butter, melted
  • 2 Tbsp brown sugar
  • 1 Tbsp half & half
  • 3 Tbsp powdered sugar
  • 2 Tbsp finely chopped pecans

Directions

In medium bowl, beat butter and sugar. Add egg and molasses and beat until smooth. Stir in water. Blend in dry ingredients completely. Spray Nordic Ware 3-cup Bundt® pan with baking spray. Pour batter into prepared pan and spread evenly. Tap bottom of pan several times on towel covered surface to remove air bubbles. Cut out disc of parchment paper with hole in the middle & place directly on top of batter, then cover & seal top of pan with aluminum foil. Place 2 cups of water in Instant Pot. Place Bundt pan on trivet insert. “Bake” on high (manual) for 28 minutes. Release steam and carefully remove hot Bundt pan immediately with an oven mitt. Invert on plate and cool.

Glaze: in a small microwave safe bowl, stir brown sugar into butter. Heat in microwave 20 seconds. Stir. Heat again for 20 seconds and stir until the mixture is smooth. Add half & half and heat an additional 20 seconds. Slowly blend in powdered sugar until glaze is thick and smooth. Stir in pecans, then glaze cake.

    This is a delicious cake! I double the recipe and baked it in my duet bundt pan. It’s a rich flavor with the molasses and toffee icing. Shared a cake with two different friends and they are still taking about it.

    I just got an IP, so I was delighted to see this recipe. I also like to bake little cakes because there are just two of us. First, the recipe directions do not indicate when to add the dates and pecans. I stirred them in after mixing the cake batter. After that, I followed the directions exactly.
    The cake is dense, not light and fluffy, as steamed cakes tend to be. It had a good flavor and the frosting was just right. The consistency is a little crumbly, but that didn’t cause a big problem. I would make this again.
