Espresso Brownie Bites with Caramel Sauce

Ingredients

  • 1/ 2 cup vegetable oil
  • 1/ 2 cup flour
  • 1 cup sugar
  • 2 eggs
  • 1/ 3 cup cocoa
  • 1 1/ 2 Tablespoons espresso powder
  • Caramel Sauce:
  • 1 cup brown sugar
  • 1/ 2 cup butter
  • 1/ 4 cup heavy cream
  • 1 teaspoon vanilla extract

Directions

Brownie Bites:
Preheat oven to 350 degrees. Spray pan with baking spray. In medium bowl, mix ingredients thoroughly. Divide batter evenly in prepared pan. Bake 15-20 minutes. Brownies are done when toothpick inserted in the center comes out clean. Let brownies cool for 10 minutes on cooling rack before unmolding.
Caramel Sauce:
Stir together sugar, butter and cream in saucepan. Bring to boil and cook until thickened, about 1-2 minutes. Remove from heat and add vanilla. Store in refrigerator.

    Sarah, try using “cake release” or “cake goop” to get a smooth release. It is an easy recipe. I almost gave my Nordic ware pans away because of the cakes sticking, but this magical concoction saved the day. Use equal parts flour, vegetable oil, and vegetable shortening. Mix until smooth. Store in refrigerator for up to six months. I brush it into the molds with a silicone pastry brush. Get into each crevice. Do not use too much. It works wonders to release the tiny cakes.

    The recipe is easy and great. I did reduce to espresso powder to 1 1/2 teaspoons otherwise it would be too strong and I added a pinch of salt which was missing from the list and 1 teaspoon vanilla extract. The recipe is yummy . My kids liked it.
    My only issue is the pan I used. It’s the one from Nordic ware Brownie bite pan for the recipe . I sprayed the squares and added the batter. However as yet it had cooled and was ready to be inverted nothing would come out. It was a mess and I was sad . I had extra batter and used it in a small loaf pan and that come out just fine.
