  • Ingredients
    • 4 eggs, separated
    • 1 cup flour
    • 1/ 2 teaspoon vanilla
    • 1/ 2 teaspoon salt
    • 3 tablespoons butter, melted
    • 1 cup milk
  • Directions
    • Beat egg yolks until light and fluffy.  Add vanilla and butter, mixing until combined. In separate bowl, mix together flour and salt.  Add to egg mixture, alternating with milk, until well combined. Beat egg whites until stiff and fold into batter. Cook as directed. Serve with butter and syrup or berries and cream.
    • SOUR CREAM WAFFLES
    • 1½ cups flour  ¾ cup sour cream
    • 2 tsp baking powder  ¾ cup buttermilk
    • ½ tsp baking soda  ¼ cup vegetable shortening, melted
    • 1 Tbsp sugar  ¼ cup butter, melted
    • 3 eggs, separated
    • Sift together flour, baking powder, baking soda and sugar; set aside. In a medium bowl, beat together egg yolks, sour cream and buttermilk. Stir in sifted ingredients, alternating with vegetable oil and butter, until smooth and free of lumps.  In a separate bowl, beat egg whites until stiff. Fold into batter. Cook as directed.
    • CHOCOLATE WAFFLES
    • ½ cup butter, melted  1½ cups flour
    • 1 cup sugar  2 tsp baking powder
    • 2 eggs   ¼ tsp salt
    • ½ tsp vanilla  ¼ tsp cinnamon
    • 2 oz unsweetened chocolate, ¼ tsp nutmeg
    •    melted
    • ½ cup milk
    • In a large bowl, mix together all ingredients until smooth. Cook as directed.
    • CORN MEAL WAFFLES
    • 1 cup flour   2 eggs
    • ¼ cup sugar  1½ cups buttermilk
    • 2 tsp baking powder  ¹/3 cup vegetable oil
    • 1 tsp baking soda  1½ cups cornmeal
    • ¾ tsp salt
    • In a large bowl, mix together all ingredients until smooth. Cook as directed.
    • MOLASSES OATMEAL WAFFLES
    • 2 cups milk  ½ cup flour
    • ¼ cup molasses  1 tsp baking powder
    • 2 cups oatmeal  ½ tsp baking soda
    • 2 eggs   1 tsp salt
    • ¹/3 cup vegetable oil  1 Tbsp wheat germ
    • Heat milk and molasses in saucepan to 110?F, until molasses is liquefied. Pour over oatmeal in large mixing bowl. Mix in remaining ingredients until well combined. Cook as directed.
    • WHOLE WHEAT WAFFLES
    • 3 eggs, separated  1½ cups whole wheat flour
    • 2 Tbsp sugar  ½ tsp salt
    • ¼cup vegetable oil  2 tsp baking powder
    • 1 cup milk
    • Beat together egg yolks, sugar and oil. Stir in dry ingredients, alternating with milk, until well combined. In a separate bowl, beat egg whites until stiff. Fold into batter. Cook as directed.
    • ORANGE PECAN WAFFLES
    • 1½ cups flour  ¼ cup orange juice
    • 2 Tbsp baking powder  ¼ cup butter, melted
    • ½ tsp salt   ½ cup pecans, chopped
    • 2 Tbs sugar  1 Tbsp orange zest
    • 2 eggs
    • Sift flour, baking powder, salt and sugar together; set aside.  In a large bowl, mix together eggs, orange juice and butter until well combined. Stir in flour mixture, pecans and orange zest until blended. Cook as directed.
    • BEER WAFFLES
    • 1 pkg yeast  1 Tbsp lemon zest
    • ¼ cup warm water  ½ tsp vanilla
    • 1 (12 oz) can light beer 2 cups flour
    • 1 egg   2 Tbsp sugar
    • ¼ cup vegetable oil  ½ tsp salt
    • 1 tsp lemon juice
    • Dissolve yeast in water. Beat with remaining ingredients in a large bowl, until smooth. Cover and let stand in warm place until bubbly. Cook as directed.
