Cherry Cardamom Loaves

  • Ingredients
    • 2 1/ 4 cups flour
    • 3/ 4 cup sugar
    • 1 1/ 2 teaspoons baking powder
    • 1/ 2 teaspoon baking soda
    • 1/ 2 teaspoon salt
    • 1/ 2 teaspoon ground cardamom
    • 2 eggs
    • 1/2 cup butter, melted
    • 1/4 cup orange juice
    • 3/4 cup milk
    • 1/3 cup dried cherries, coarsely chopped
    • 1/4 cup chopped blanched almonds
  • Directions
    • Heat oven to 350 degrees F. Grease and flour pan; set aside. In medium bowl, combine flour, sugar, baking powder, baking soda, salt and cardamom; mix well. In small bowl, combine eggs, butter, orange juice and milk. Add egg mixture to flour mixture and stir just until dry ingredients are moistened. Stir in cherries and nuts. Pour batter into prepared pans. Bake at 350 F for 25-30 minutes, until toothpick inserted comes out clean. Remove from oven and cool 10 minutes in pan. Remove from pan and cool completely. Makes 8 loaves.
