We had everything in the recipe on hand with exception of the spinach, but we had zucchini. I sliced zucchini in a 1/4 “ dice. Precooked all veggies in that oiled pan for 7 minutes, then let them cool to body temperature, slid them from the pan into the egg mixture with the chives, then poured it all back into the baking pan. Baked for 20 minutes, let set for 5, then cut into squares, one for each everything bagel slice for open face sandwiches. DELICIOUS!
