Glorified Rice

Ingredients:

¼ cup cold water
1 envelope unflavored gelatin (1 tbsp.)
3 cups cold, cooked rice
10oz. Jar (1-1/2 cups) maraschino cherries, drained and chopped
2 medium bananas, sliced and halved
20oz. Can (2-1/2 cups) crushed pineapple, drained
2 cups whipping cream, whipped, or 4 cups frozen whipped topping mix, thawed
6 tbsp. sugar
½ tsp. salt
1 tsp. vanilla
tsp. almond extract

Preparation:

In small saucepan, sprinkle gelatin over water. Stir over low heat until gelatin is dissolved; cool. In very large bowl, combine remaining ingredients. Add gelatin; blend well. Spoon into 12-Cup Bundt Pan; pack lightly. Chill until firm. 10-12 servings.

Tip: Recipe may be halved for 6-Cup Bundt Pan.
