New York Potato Pudding Cup

Preparation

Sauté onion in cooking oil. Stir in grated potatoes and eggs. Add sifted dry ingredients and mix well. Spoon into a greased, Bundt Muffin Pan, filling each cup 7/8 full. Bake at 350 degrees about 30 minutes, or until brown and crisp around the edges. Remove from pan and serve hot with fluted sides up.
